The Dutch grow superb vegetables and they are sensible about food, so Amsterdam should be a great vegan city, and in parts it is. The trouble is the tourist centre, where a vegan menu often means chips and a wrap.
Walk fifteen minutes out of the middle and the cooking improves enormously. These are the ones I would go back to, listed independently.
