Monaco is a small principality with an enormous number of expensive restaurants, and expensive is not the same thing as good for you. What I look for here is the kitchen garden, the organic certificate and the chef who can build a menu around vegetables without treating it as a favour.
Elsa at Monte-Carlo Beach is certified organic and sits on the water, which makes it the first address I give anyone. Blue Bay works from the hotel's own kitchen garden and cooks Caribbean and Mediterranean food with real intelligence. Le Louis XV lets the vegetable garden lead the menu, which from a three-star Riviera dining room is more radical than it sounds. L'Hirondelle at the Thermes Marins spa is built around wellness, and Avenue 31 and La Note Bleue give you honest vegetable plates, grains and salads without the theatre.
The standard is the same on the Riviera as it is anywhere else: purity, wholesomeness, organic where it can be managed, and plenty of fresh vegetables, pulses, grains and seeds. Nobody here has bought their place on this page.

- Blue Bay uses the hotel's own garden for its Caribbean and Mediterranean menus, and Le Louis XV at the Hotel de Paris builds its cooking around the vegetable garden. Produce grown nearby and picked recently always tastes of more.
- Is there anywhere healthy in Monaco for a light lunch?
- L'Hirondelle at the Thermes Marins is designed around wellness, and La Note Bleue on Larvotto beach does dependable salads and vegetable plates with your feet more or less in the sand.
- Are these Monaco restaurants vegan?
- Mostly not, and I make no apology for it. The guide is plant-forward, not plant-only. These kitchens cook vegetables and fish with skill, and several will build you an entirely plant based menu if you ask.
- Do Monaco restaurants pay to be listed?
- No, and money would be the fastest way to be left out. I choose each one on sourcing, freshness and how much real produce arrives on the plate.
