Seattle was not a city I expected to become a stronghold for plant-based eating, but the Pacific Northwest has always taken food seriously, and now it shows. Good farms, good foragers and cooks who understand vegetables are more than a garnish.

Work through it by neighbourhood. Wallingford has Harvest Beat and its five-course plant-based tasting menu, sourced from local farms and foragers. Madison Valley has Cafe Flora, which has kept a vegetarian dining room going for more than thirty years. Roosevelt has The Wayward Cafe for all-day vegan comfort food. On Queen Anne, Sushi Samurai proves fish-free sushi can be precise, and Moe Vegan brings soul food to the plant-based table.

For a healthy lunch in Seattle, Cafe Flora and The Wayward Cafe are my two reliable answers. For weekend brunch, Cafe Flora first, The Wayward Cafe if you want it more relaxed. For a proper occasion, Harvest Beat. Vegan sushi means Sushi Samurai, and nowhere else comes close.

My standard is the same here as everywhere else: real ingredients, mostly plants, organic where it is possible, and no money changing hands for a listing.
