Paris took its sweet time. For years, eating well here meant negotiating politely with a kitchen that had no intention of negotiating back. Now a serious generation of bio and vegetal restaurants has arrived, and some of them are very good indeed.
Below you will find organic bistros, vegan dining rooms and cafes applying proper French technique to vegetables instead of treating them as a garnish.
I picked every one of these myself, plate by plate, and I held them to the standard I hold my own kitchen to: purity, wholesomeness, organic where the chef can manage it. No Parisian charm has ever talked me round.

L'Arpège
$$$$Paris, France
Alain Passard's three-Michelin-starred temple to the vegetable, meat and fish appear, but the garden is the star.
Best for: Three Michelin stars and the garden still wins. Passard built his name on vegetables from his own plots, and they are the only reason you need to book.

- L'Arpège on Rue de Varenne. Alain Passard made his name on vegetables grown in his own gardens, and while meat and fish still appear on the menu, the produce is the reason you book. Ask for the vegetable tasting and reserve well ahead.
