Brighton eats plants without anyone having to persuade it, which is wonderful for you and rather demanding for me. When the standard across a city is already high, the bar for earning a place on my page has to be higher still.
What I have gathered here is a mix of all-day wholefood cafes, seafront kitchens and a couple of dining rooms doing vegetable cooking ambitious enough to justify the train from London on its own.
Every choice is mine and mine alone. No restaurant pays for inclusion, and no restaurant can buy a Gillian's Pick. Ever.
